The O'Rourke family has farmed in the Burren — the extraordinary limestone plateau of north-west Co. Clare — for over 200 years across five generations. The landscape is unlike anywhere else in Ireland: 400-plus species of wild plants, natural clover, and the microclimate created by the limestone karst give the cattle a diet no feedlot could replicate.
Hereford and Angus cattle roam freely across the 500-acre farm, grazing semi-wild land where the natural flora means the animals need minimal intervention and almost zero medicine. The result is certified organic beef that carries the taste of the Burren itself.
Burren Premium Beef holds the GEOfood certification from the UNESCO Burren and Cliffs of Moher Global Geopark — a designation that recognises food produced in a recognised UNESCO geopark, with full traceability to the specific farm and landscape.
The Burren is a 250km² karst limestone landscape that has been farmed since the Neolithic period. Its unique geology creates a paradox of fertility — the thin soil over warm limestone supports an exceptional diversity of plant life, including plants more typically found in Arctic, Alpine, and Mediterranean climates. Cattle grazing here eat a diet of 400+ plant species, producing beef with a depth and complexity tied directly to the land.
Cattle are butchered by a local craft butcher, and the beef is aged for 35 days for maximum flavour and tenderness before boxing. Orders are delivered fresh (not frozen) on set delivery days, nationwide across Ireland. Box sizes range from taster boxes to a full 20kg family box.
