Tom Gilligan began farming in Four Mile House, Co. Roscommon over a century ago. In 1990, his grandson Padraic Gilligan opened the first farm shop, selling fresh meat directly from the land that had fed his family for generations. That farm-shop model — short supply chain, traceable provenance, quality over volume — has driven Gilligan's ever since.
The farm now supplies some of Ireland's top restaurants and has won awards at Great Taste, Blás na hÉireann, and international Angus Steak competitions. Their beef is raised slowly, allowed to roam and graze on the open fields of Roscommon, and never rushed to market before the animal is ready.
Padraic Gilligan's position is simple: the best beef comes from animals reared slowly, fed well, and free to roam on grass. Roscommon is one of Ireland's best beef counties — rich pasture, relatively dry summers, and the space to run large herds without intensive management. Gilligan's cattle reflect that landscape in every cut.
The online shop carries a full range of fresh beef, lamb, sausages, and breakfast cuts — from fillet steaks and ribeye to oxtail, short ribs, and farmhouse burgers. Free delivery on orders over €100 anywhere in Ireland or Northern Ireland; €10 flat rate below that. Local farm pickup is also available from Four Mile House.
