North Cork and the Blackwater Valley are part of the Golden Vale — the limestone-rich grassland belt that runs across Tipperary and into Cork, producing some of the most consistent grass-fed beef in the country. The county also has a strong sheep-farming tradition in the uplands west of Macroom and in the Shehy Mountains near the Kerry border.
Cork city's English Market has maintained a tradition of independent meat traders since the eighteenth century. The county as a whole supports a significant artisan food sector, and several Cork butchers have built strong local reputations for sourcing grass-fed and dry-aged beef.
