Waterford is one of the less-celebrated counties for food provenance, but its credentials are strong. The Comeragh Mountains produce mountain lamb from heather and upland grassland. The Blackwater Valley — shared with Cork to the west — supports rich beef farming on the fertile limestone soils that characterise the Golden Vale's eastern edge.
The Village Butcher in Dublin sources exclusively from two named farms, one of which is Darren Flynn's farm in Waterford — a Belted Galloway, Dexter, and cross-breed operation. That a Dublin artisan butcher travels to Waterford for their supply says something about the quality of what's produced here.
